Ability to sell gift membership when giftee is unknown.

Is there a way to sell a gift membership through daily sales but not attach it to a record for the giftee?  For example, someone wants to buy a gift membership for their newspaper delivery person for the holidays but they do not know their full name and address.  We can handle this on our end by giving them a card and return envelope to wrap as the gift, but what do we do in Altru?
